Master Culinary Artisan - D. Senáy Gales
As a young lad, D. Senáy's first culinary experience in the kitchen was with his paternal grandma - Annie B. Gales, affectionately called "Mama Bee". It was her simple 1-2-3 ingredient recipe for Country Fried Apples that she created for his grandpa - William Mell Gales, Sr., affectionately called "Daddy Dick", that started this Culinary journey. When his mother would drop him off, for countless summers (in the deep South) with Mama Bee and Daddy Dick, D. Senáy (or D.D. as she called him) could be seen creating elaborate designs and crop circles in the grassy field with Daddy Dick's lawn chopper rider (an acre at a time), which in every instance, would ultimately frustrate his granddaddy. Needless to say, Daddy Dick would always run after him in his big ole crop duster hat and blue jean over-alls waving his arms like a mad man, trying to stop him in the height of his creative conquests. Mama Bee would stand in the kitchen window and laugh herself to tears, looking out over the field at the show of "You can't catch me!" "Nanny, Nanny, Boo-Boo". Of course - Daddy Dick banished him to the inside of the house (and into the kitchen with Mama Bee) after he got caught and he would re-cut the acreage himself.
Years later, D. Senáy asked Mama Bee to show him how to make those delicious Country Fried Apples. After returning home from countless summers, when his mother was away from the house, he would try not to burn down the kitchen, in a heroic attempt to duplicate this culinary delicacy. He emulated everything Mama Bee did, including singing while cooking and listening to James Cleveland and Shirley Caesar. Little did he realize, that this gift of Culinary Arts would be deeply rooted inside him.
His greatest inspiration for this endeavor was his 1st cousin - Sylvia, and his close friend of 20 plus years - The Celebrity Make-Up Maestro Derrick Rutledge - at any family events, they would create culinary feasts to rival the Food Network. "Now these are my real mentors in the Kitchen" says an humble D. Senáy.
His first experience with tasting a Sweet Potato-Type Pie was from a family friend - Daddy Bill (His Mother's Fiancé). One Bite - Changed His Life! Determined to make the World's Finest Yam Pie, years of trial and error has resulted in Masterpieces of Exceptional Culinary Expectations using only the World's Finest Ingredients.
Since 1986, D. Senáy started baking Homemade Pies out of Yams instead of Sweet Potatoes. After years of research, he concluded that the world has yet to unveil the Finest Gourmet Yam Pie made from scratch. During his early years, being raised in the church, he would often hear the church mother's say - "If you can make good Candied-Yams, you'll make an excellent pie".
